Morning Joe Delight!

I blame my coffee addiction on Italy.


When I was a freshmen in college, I wanted to do it all....study, class, hockey, marathoning, partying, dating....everything. There just weren't enough hours in the day, so I cut back my sleep to nearly none and relied on coffee to fuel me through my days...every day. By second semester I had decided that PROBABLY wasn't a healthy way to live (duh)...so I cut the coffee cold turkey. 


Enter: worst headaches of my LIFE x 1 week. And I was still drinking diet soda to get a caffeine fix! Scary!


I remained "sober" (hehe) for YEARS...until I went to Italy with husband. My glorious 10 weeks in Italy reignited my love for coffee, particularly espresso and cappuccino! I've expanded my arsenal to most any form of coffee, just take a look at my kitchen...



My beloved Kitchen Aid espresso machine with frother for cappuccino. Yes, I have a mini Starbucks operation running over here!



And then I have my rinky-dinky Mr. Coffee coffee pot...which I opted for this morning.



Mmmm! And does everyone else have a favorite coffee mug? 
I am blessed to have a set of 6 so I never run out!


And how about coffee's healthfulness, huh? Let's consult WebMD for some truth...


Coffee is associated with a lower risk of developing type 2 diabetes, Parkinson's disease, and colon cancer. Coffee can lift your mood and treat headaches...and lower the risk of cavities
...and the more your drink the better!


Harvard researchers found that consuming 6 or more cups of coffee daily reduced mens' risk of type 2 diabetes by 54% and womens' by 30% compared to those who don't consume coffee [1].



The article states [1]:
"Consider this: At least six studies indicate that people who drink coffee on a regular basis are up to 80% less likely to develop Parkinson's, with three showing the more they drink, the lower the risk. Other research shows that compared to not drinking coffee, at least two cups daily can translate to a 25% reduced risk of colon cancer, an 80% drop in liver cirrhosis risk, and nearly half the risk of gallstones."
 
My take....
Drink in moderation. Too much caffeine can cause insomnia, nervousness, restlessness, stomach irritation, nausea, vomiting, an increased heart rate and respirations. Large doses of caffeine can cause headache, anxiety, agitation, chest pain, and ringing in the ears.

Email forward fallacies and olive oil for ulcers


I don't send forwards. Never have, never will. I got a forward today about fruit, so I opened it as it was from my aunt who knows I'm a dietitian. I was nearly in tears I was laughing so hard. Check it out:


EATING FRUIT...

It's long but very informative
We all think eating fruits means just buying fruits, cutting it and just popping it into our mouths. It's not as easy as you think. It's important to know how and when to eat.
What is the correct way of eating fruits?
IT MEANS NOT EATING FRUITS AFTER YOUR MEALS! * FRUITS SHOULD BE EATEN ON AN EMPTY STOMACH.

If you eat fruit like that, it will play a major role to detoxify your system, supplying you with a great deal of energy for weight loss and other life activities.
FRUIT IS THE MOST IMPORTANT FOOD. Let's say you eat two slices of bread and then a slice of fruit. The slice of fruit is ready to go straight through the stomach into the intestines, but it is prevented from doing so.
In the meantime the whole meal rots and ferments and turns to acid. The minute the fruit comes into contact with the food in the stomach and
digestive juices, the entire mass of food begins to spoil....

So please eat your fruits on an empty stomach or before your meals! You have heard people complaining - every time I eat watermelon I burp, when I eat durian my stomach bloats up, when I eat a banana I feel like running to the toilet etc - actually all this will not arise if you eat the fruit on an empty stomach. The fruit mixes with the putrefying other food and produces gas and hence you will bloat!

Graying hair, balding, nervous outburst, and dark circles under the eyes all these will NOT happen if you take fruits on an empty stomach.

There is no such thing as some fruits, like orange and lemon are acidic, because all fruits become alkaline in our body, according to Dr. Herbert Shelton who did research on this matter (is this even grammatically correct??).  If you have mastered the correct way of eating fruits, you have the Secret of beauty, longevity, health, energy, happiness and normal weight.

When you need to drink fruit juice - drink only fresh fruit juice, NOT from the cans. Don't even drink juice that has been heated up.

 Don't eat cooked fruits because you don't get the nutrients at all. You only get to taste. Cooking destroys all the vitamins.

But eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it.

 You can go on a 3-day fruit fast to cleanse your body. Just eat fruits and drink fruit juice throughout the 3 days and you will be surprised when your friends tell you how radiant you look!

Drinking Cold water after a meal = Cancer! Can u believe this?? For those who like to drink cold water, this article is applicable to you. It is nice to have a cup of cold drink after a meal. However, the cold water will solidify the oily stuff that you have just consumed. It will slow down the digestion. Once this 'sludge' reacts with the acid, it will break down and be absorbed by the intestine faster than the solid food. It will line the intestine. Very soon, this will turn into fats and lead to cancer. It is best to drink hot soup or warm water after a meal.

A serious note about heart attacks HEART ATTACK PROCEDURE: (THIS IS NOT A JOKE!) Women should know that not every heart attack symptom is going to be the left arm hurting. Be aware of intense pain in the jaw line. You may never have the first chest pain during the course of a heart attack. Nausea and intense sweating are also common symptoms. Sixty percent of people who have a heart attack while they are asleep do not wake up. Pain in the jaw can wake you from a sound sleep. Let's be careful and be aware. The more we know the better chance we could survive...was this forward about cancer and fruit or heart attacks? I’m now confused…..

A cardiologist says if everyone who gets this mail sends it to 10 people, you can be sure that we'll save at least one life.

*EYE ROLL* It SCARES me that there's this kinda crud floating around! Much less, people are reading and believing it! Research health claims that you hear and ask your medical provider before falling for any fallacies out there!


On a completely unrelated note....



While I like to think I teach patients things, they also teach me things, too! Like this week, for example, a patient asked, “Is it true that olive oil helps prevent stomach ulcers?” After swallowing my pride just a bit, I responded with an, “I’m not sure, but I’ll get back to you!”


Ends up, olive oil DOES help to prevent stomach ulcers according to WedMD.


A Spanish study from 2007 suggested virgin olive oil may help prevent and treat H. pylori infections, a leading cause of gastritis and peptic ulcers. Lab testing revealed that the antioxidant compounds found in virgin olive oil are effective against several strains of H. pylori. Other natural products such as red wine, green tea, and cranberry juice are rich in a class of antioxidants known as phenolic compounds, which can inhibit the growth of H. pylori [1].


Phenolic compounds are found to have strong antibacterial properties. Lab results show olive oil’s phenolic compounds are effective against 8 strains of H. pylori, including 3 that are resistant to some antibiotic treatments [1]. Go virgin olive oil!

The sad truth about luncheon meat...



Wonder why that pre-packaged turkey breast has an expiration date 6 weeks away? Me too.

The deli meat business brought in roughly $17 billion dollars in 2004 according to a report by Packaged Facts. There are 3 types of deli meats out there: whole cuts of meat (roast beef, turkey breast), sectioned and formed prodcuts (cooked hams), and processed products (bologna). Most all lunch meats contain nitrites and nitrates which are preservatives, coloring, and flavoring additives which have been linked to some forms of cancer, such as stomach, liver, esophagus, mouth, and larynx [1].

Processed meat consumption has been associated with an increased risk of stomach cancer in some epidemiological studies among Swedish women according to the National Institute of Environmental Medicine, published in the International Journal of Cancer in 2006. The culprit to blame? Nitrosamines, it seems. The study prospectively examined the association between intakes of processed meat, other meats, and N-nitrosodimethylamine (most frequently found in nitrosamine-containing foods). A total of 61,433 women were included in the study. After an 18-year follow-up, there were 156 incidences of stomach cancer which appeared more prevalently in those women consuming higher levels of processed meats, but not of other meats such as red meat, fish, and poultry. Stomach cancer risk was 2-fold higher among women in the top quintile of N-nitrosodimethylamine intake when compared with the bottom quintile. And thus, high consumption of processed meats may lead to an increased risk of stomach cancer [2].

When shopping for lunch meats, you may have seen some verbage along the lines of, "contains up to 10% added moisture". Many lunchmeats, including ham, roast beef, and turkey contain added solutions of water, sodium, and water with spices [1], which can drastically increase the sodium content of these meat products [1].

According to one source, cold cuts will last only 3 to 5 days after being opened while deli cuts will only last one to three days [1]. Consume safely!

Monosodium glutamate (MSG), a flavor enhancer, is also found in various lunch meats. MSG is recognized by the Food and Drug Administration (FDA) as "GRAS" (generally recognized as safe). Long-standing research has made no definitive link between MSG and serious health risks, including Alzheimer's disease and various cancers. Noted, however, are short-term reactions to MSG ingestion, such as: headache, flushing, sweating, sense of facial pressure or tightness, numbness, tingling, or burning around the mouth, fluttering heartbeats, chest pain, shortness of breath, nausea, and weakness. Symptoms reported are generally mild, according to Mayo Clinic [3].

Hold the acrylamide, pease!



Here's just one more reason America's vegetable of choice (in the form of chips or fries) needs a closer look.

In addition to the excessive fat and sodium content of potato chips and french fries, a chemical called arcylamide is also found -- a possible cancer-causing agent. Because acrylamide is found in carbohydrate foods which are cooked at high temperatures, acrylamide is also found in foods such as cereals, baby foods, breads, and crackers [1].

In lab animals, acrylamide is shown to cause tumors and neurological problems. Consumer's in the US are not seemingly phased by the recent discovery of the possible carcinogenic effects of acrylamide. Many


American's are yet to hear about acrylamide despite its presence in nearly 40% of foods. Federal governing bodies in the US, Canada, and Europe are stepping up efforts to reduce the levels of acrylamide in foods [1].

Acrylamide forms when sugars and asparagine (an amino acid) are heated together at temperatures more than 248 degrees Fahrenheit. This effect, which is partly a "Maillard reaction," enhances a food's color, texture, aroma, and flavor [1].


What to do about it? Continue eating a healthy, balanced diet that is low in fat, cholesterol, salt, and added sugar and rich in high-fiber grains, fruits, and vegetables, says the Food and Drug Administration. Joe Schwarcz points out that there is acrylamide in certain foods just like there are aflatoxins in peanuts, ethanol in wine, urethane in sherry, styrene in cinnamon, and hetreocyclic aromatic amines in beef bouillon [1].

It's also important to know that acrylamide levels vary greatly between identical products such as Krispy Kreme donuts and McDonald's french fries.

Just like anything and everything else, watch it. No food should be over-consumed in the diet -- balance is always the goal.

Exercise won't make you thin.

I can recall sitting in an undergrad nutrition class (who I believe was taught by the yummiest of professors) and having it explained how much more effective controlling diet for weight loss was than increasing exercise alone. Because really, weight loss is just simple math. To lose one pound, you need to create a deficit of 3,500 calories which can be done through the diet, exercise, or ideally, a combination of the two. With exercise alone, an average-sized adult owes the gym 35 hours of moderate-to-intense exercise, or approximately 35 miles of walking/running. Now that's not exact science, but it gets the point across: exercise alone will probably lead to osteoarthritis before it gets you to your weight loss goal (half jokingly). Needless to say, that yummy professor solidified my thoughts on proper nutrition -- it's important stuff, especially in regards to weight loss.

So
TIME put out this article on August 9th explaining why exercise won't make you thin. In addition to the information above, the article explains that some believe exercise to increase their appetite, causing them to eat more and negate the work of their exercise. Some exercisers just make poor decisions because they exercise, likely overestimating the calories they expend during exercise [1].

The article states that there are more than 45 million Americans who belong to a gym, up from 23 million in 1993. Of course, that doesn't mean that people actually GO to the gym (unfortunately a membership alone does not qualify you as physically active). A study performed by the Minnesota Heart Survey found that more people say they exercise than the number who actually do. The 20-year survey found that the number of individuals saying they exercise rose from 47% in 1980 to 57% in 2000 [1].

Until recently, exercise was deemed an integral part of weight loss, when in fact, its role is largely over-stated. Exercise does, however, play an essential role in fighting chronic disease and in particular, heart disease...as well as cancer and diabetes [1]. So it's not to say exercise isn't hugely important...just maybe not so for weight-loss endeavors.

A recent study lead by Dr. Timothy Church randomized 464 overweight, sedentary women into 4 groups. The groups were asked to workout with a trainer for 72 minutes, 136 minutes, and 194 minutes per week for six months, with the last group being a control group. The women were asked to change nothing diet-related and to fill out monthly medical-symptom questionnaires. The results? On average, all the women lost weight. The three groups meeting with the trainer for varying lengths of time did not lose significantly more weight than the control group, however. Some women in each of the four groups actually gained weight -- some more than 10 lbs! What happened? Some of the exercising women ate more because the worked out. Some "rewarded" hard work at the gym with an extra treat. Some moved less when they got home because they worked out [1].

Current 2007 recommendations for exercise put out by the American College of Sports Medicine and the American Heart Association include 60 to 90 minutes most days of the week for weight loss. That's quite a lot for the average Joe [1].

A quote from the article:
"According to calculations published in the journal Obesity Research by a Columbia University team in 2001, a pound of muscle burns approximately six calories a day in a resting body, compared with the two calories that a pound of fat burns. Which means that after you work out hard enough to convert, say, 10 lb. of fat to muscle — a major achievement — you would be able to eat only an extra 40 calories per day, about the amount in a teaspoon of butter, before beginning to gain weight. Good luck with that."

So today during my TWO hockey games (makes me tired just thinking about it!), I will opt for water in place of my G2 (Gatorade's low-sugar option). While even I was thinking, "It's just 100 calories...I'm burning WAY more than that"...I am reminded of otherwise. Thanks,

Study says: saccharin's alright.

After the soda tax poll, writing on this study seemed only appropriate. I am NOT justifying the partaking of ANY carbonated beverage, but for my one-a-day diet soda habit, I'll take the Splenda and leave the 160 calories for another waistline. I digress....

A study published by the
Journal of Cancer Epidemiology Biomarkers & Prevention published a study claiming no cancer-causing effects of artificial sweeteners such as saccharin and aspartame. The study assessed the risk of stomach and pancreatic cancer incidences in 3,000+ Italians with "regular" intakes of artificial sweeteners. This particular study follows a previous study performed on rats in 2007 published in Environmental Health Perspectives, which showed cancer-causing effects of artificial sweeteners [1].

Artificial sweeteners such as saccharin and aspartame are used world-wide and they produced industry amounting $1.83 billion dollars in 2007 alone. The most common artificial sweetener world-wide is saccharin with aspartame coming in second [1].

In Milan, Christina Boselli conducted case-controlled studies between 1991 and 2004 among "users" and "non-users" of artificial sweeteners. Among the data included there were 230 people were diagnosed with stomach cancer and 547 were healthy controls. Another 326 diagnosed with pancreatic cancer were included, with another 652 health controls. And yet another 454 persons diagnosed with edometrial cancer were included with another 908 healthy controls. The results were adjusted for confounding factors. None of the data produced results showing cancer-causing effects of cancer and nor did one artificial sweetener over the others [1].

Limitations of the study should be noted. Firstly, the included data was that of Italians only. Secondly, only three types of cancer were studied [1].

Another study sponsored by the National Cancer Institute showed no significant difference between groups consuming asparatme and incidences of leukemia, lymphoma, or brain tumors. This large-scale study included 285,079 men and 188,905 women, all aged 50 to 69 years [1].

Yet another study review published in 2007 in Critical Reviews in Toxicology showed that adverse effects of artificial sweeteners had "no credible scientific basis". This particular review included a panel of 8 experts over the course of 11 months. Over 500 studies, articles, and reports completed over the 25 years prior were included. Some of the included data was unpublished, but submitted to government bodies for regulatory process approvals [1].

My take: if you have to choose one...choose diet. Artificial sweeteners, no matter how they are chemically modified to be calorie-free are NOT natural products. Just my $0.02 on soda -- anyone care to share theirs?

Microwaving plastic...hmmm...

Lily and I are flying solo this week, as Mark is at headquarters for business. The last thing I wanted to do last night was cook, so I popped in a SmartOnes -- SantaFe Style Rice and Beans, I believe it was called. Anyways, those things don't fill up this heifer, so I decided to add in more corn...which I happened to have in one of those steamable bags. I read the directions: 4-5 minutes on high. Now, I admit, I reheat leftovers in tupperware which I've been told is bad (but is it?!)...but the steamables bag...that just seemed way more wrong than my reheating-in-tupperware laziness. So, of course, I researched this morning as I sipped my daily vice: cappuccino. As for me and my tupperware, I am in luck. The FDA approves microwave-safe plasticware for chemical leaching onto food when heated. Any plastic products emitting unsafe amounts of chemicals onto foods are deemed unsafe for retail sale. And what about those leftover fajitas sitting in Styrofoam I plan to eat for lunch? Well, those can likely be reheated in the same fashion [1].

Similarly, Mayo Clinic dietitian, Katherine Zeratsky, discussed this same topic in a January 2009 article on the heating of plastic and the release of dioxins. Firstly, dioxins are cancer-causing substances found in soil, water, and animal fat. They are commonly created from forest fires and the burning of household trash. Reheating food in plastic, however, is also discussed as being safe from this credible source, as well [2]. The American Cancer Society concurs, too. So...

Microwave safety tips [1]:


- If you're like my family and think anything with a lid is reusable storage, please be advised that margarine tubs, cottage cheese tubs, yogurt containers, and plastics of the like are typically NOT microwave-safe


- If you're not sure whether or not a plastic is microwave-safe, play it safe and transfer it to a plate or glass dish - Remember to vent or leave open a jar any plasticware being reheated

- Use wax or parchment paper when reheating food on a plate rather than plastic wrap -- plastic wrap, while being heated, should not touch food


I'm glad my corn-bulked meal was A-okay, and now I'm even more-so looking forward to those fajitas at lunchtime...reheated in styrofoam.

Fire up the grill!

It's officially summer in Tulsa, and I hear the north is getting a steady dose of summer heat, as well. Mom informed me last night that their air-conditioning has been running all week. Translation: it's blazin' in Chicago. And summertime surely means one thing: grilling, cookouts, barbecue, and so on!

There's a few grilling safety tips you should consider before enjoying your next nearly-charcoal burger, however. While grilling offers a quick and healthy cooking method, it can also produce carcinogenic foods (i.e. cancer-causing). You should avoid eating charred, blackened, or burned meats. The high temperatures of grilling can make cooking foods thoroughly a challenge, but the alternative just isn't safe.

These cancer-causing compounds come in two forms: HCA's and PAH's. Heterocyclic amines (HCA's) are produced when red meat, poultry, and fish are cooked at ultra-high temperatures. PAH's, or "polycyclic aromatic hydrocarbons", are produced when fat drips from cooking meat into the grill producing a smoke. This smoke unsafely contaminates the food. These nasty PAH compounds are also produced when flames physically touch cooking food, causing it to blacken and char [1].

Some ways to make grilling safer and healthier include [1]:
- cooking leaner meats vs. high-fat and highly processed hot dogs, sausages, and bratwursts
- grill smaller cuts of meat to reduce cooking time and temperature
- remove all visible fat before grilling - this will cut down on the fat drippings which cause that harmful PAH compound production
- keep the grill grates and racks clean (you can use cooking spray to make cleaning easier)
- marinade meat before grilling -- the antioxidants in herbs and spices* which are found in marinades can reduce the production of HCA's
- red meat requires longer grilling time than poultry and fish, so opt for the latter
- use tin foil on grill grates and racks to provide a barrier between flames and food
- grill at lower temperatures and check internal temperatures for safety
- grill in the center of the grill, placing the charcoal on the edges of the grill to decrease PAH contamination
- remove charred and blackened portions of meat before eating
- add sauces at the end of grilling to avoid burning

And as always, vegetables come out on top. Grilling vegetables does not produce carcinogenic compounds...load up!

As pictured, shish-kabobs are a low-fat, balanced meal made on the grill. Marinade meat and vegetables (separately) in a teriyaki flavor, grill up, and serve over brown rice with low-sodium soy sauce. Delicious!

And for all you carnivores, choose red meat that is 93% lean or higher. My old timer parents made the switch so you can, too! For burgers, add chopped onion, seasoning salt, and pepper to your ground beef patties to enhance the flavor...sans the fat. I assure you, you'll love that burger more when you know it's a leaner choice!

P.S. Don't forget the 100% whole wheat buns!

"Taste the rainbow!"

Forget the Skittles for just a second and let's talk antioxidants...

Don't get defensive, now...but we all have lots of bad guys in our bodies that are produced from the every day toxins we ingest, inhale, absorb, etc. -- everything from gas emissions to cigarette smoke to alcohol. And as health-conscious adults, we ought to aim to reduce bad guys as the development of cancer only takes ONE of them. One way to do this includes eating antioxidant-rich foods.

What is an antioxidant? A naturally-produced substance that fights the bad guys (i.e. free radicals) that can damage our cells, leading to conditions such as cancer and heart disease over time. Antioxidant research constitutes a large portion of today's oncology research as both animal and human studies of antioxidants have results supporting the prevention of cancer! This is big stuff, people! Cancer is a leading cause of death world-wide according to the World Health Organization (WHO), and the second leading cause of death in America according to the Center for Disease Control (CDC). Until recently, stroke checked in as the second leading cause of death - cancer rates are on the rise. Sadly, the World Cancer Report confirms this trend. In 2008, they projected cancer to be the leading cause of death in the U.S. by 2010 [1]. Um, that's 6 months away, folks.

We all know Oprah and her bff Dr. Oz - they love to chat about these antioxidant fellers. Let's see how we can get some, too.

Dr. Oz's "Anti-Aging" checklist
Dr. Oz's "favorite" anti-oxidant: blueberries. But, let's diversify some as not every antioxidant is found in a blueberry, Dr. Oz.


Lycopene. Prostate cancer and heart health are the biggies here. Lots of research and strong, strong evidence supporting the red stuff.

- Sources: tomatoes, watermelon, grapefruit, blood oranges, and tomato products.

Beta-carotene. In addition to cancer prevention, orange/yellow beta-carotene is an immuno-enhancer and has been linked to eye health.

-Sources: carrots, sweet potatoes, cantaloupe, pumpkin, squash, mango, and apricots.

Lutein. Think greens and leafy vegetables for cancer prevention and healthy eyes.

-Sources: spinach, kale, collard greens, broccoli, etc.

Anthocyanin. You're welcome Dr. Oz. You can find anthocyanin in dark fruits and vegetables in the blue/purple family.

Sources: blueberries, eggplant, purple grapes, blackberries, cherries, and acai (but more on that last one later).

Contrary to Oz, my favorite antioxidant: resveratrol. This, my friends, can be found in red wine. Hey, hey, hey! More on this soon!

I focused heavily on F&V's (fruits and vegetables, for you slower folks) in this blog, however, antioxidants are also found in nuts, grains, and some meat, poultry and fish.
